Botanical Name: Eruca sativa
Fast and vigorous growing with attractive deeply serrated leaves like a wild rocket. The faboulous peppery taste is a must in Italian salads, served alone, or blended with garlic, pine nuts, Parmesan and olive oil for a delicious fresh pesto.
How To Grow | Sow thinly in rows 25cm (10in) apart. Cover lightly with fine soil. Firm gently and keep moist. For a continuous crop sow every 2-3 weeks. Prefers a well-drained soil in a sunny position. For baby leaf no thinning is required. For mature plants thin to 10cm (4in) apart when large enough. Keep well watered and fertilised. Harvest: 6-8 weeks from sowing. Pick individual leaves as required. Plants will regrow following 3-4 cuts. |

Instructions
Place the rocket in a food processor and drizzle on olive oil. Blend with short pulses until pulverised. Add in the garlic and continue to grind. Now add in your nuts, lemon juice, salt and pepper, mix and then move the mixture into a bowl. While mixing by hand add a small handful of cheese and more olive oil until you achieve your desired consistency. Serve with pasta.
